Fritaja is an egg omelet. It is traditional Mediterranean Croatian dish. Fritaja is especially common in the warmer part of the year, especially in springtime, when many plants and vegetables such as wild asparagus, wild hops, herbs as fennel, mint, feverfew and chicory, tomatoes, young garlic sprouts and spices are available to add to egg. It is many times prepared throughout the year with ham, mushrooms, sausages, bacon, white or red wine.
